Oatmeal: The Underdog of Comfort Foods

Here’s to oatmeal, the unsung hero of breakfast. You ever have those mornings that are just slow and you rather get back in the bed. I know, that sounds like most morning. But, whenever I need an extra hug from the universe to get my day started, I make oatmeal.

It really doesn’t get the respect it deserves. It’s like the O.G. of breakfast foods. We forget how great it is. Simple, spiced, or dressed up, oatmeal is always filling. While instant oatmeal is good, nothing tops stove top.

I make it with one part almond milk and one part water. Usually just sugar and butter are enough for me, but recently I added berries and a dash of cinnamon. The berries increase my fruit intake and the cinnamon jump starts my metabolism in the morning. When I’m really felling festive, I add coconut shaving for a little bit of crunch.

Quaker Steel Cut Oats Quick 3 Minute are my favorite kind. It gives you the right texture for a full body meal.

Breakfast is indeed the most important meal of the day and too often we skip it. I know most mornings we hit the ground running, but take time to eat something. Your body will thank you.

You are fueling it for the long day you have ahead. You will have more energy and be quicker on your toes. Oatmeal is so easy to make– 5 minutes tops from heating the pan to spoon in mouth. It is also something you can meal prep. Make enough oatmeal for the week and warm it as you go. While it may stiffen, add a little extra water or milk as you reheat and you will be good to go.

Funny thing, as much as I love oatmeal, I hate oatmeal cookies. There’s a huge difference. You cannot convince me otherwise.
